Sukhdi also known as gol papdi or gur papdi is an Indian dessert. It is made with simple combination of three key ingredients wheat flour, jaggery, and ghee (clarified butter). It is very easy to make and yet very nutritious specially for growing kids. You can add other ingredients like ginger powder, cardamom powder, shredded coconut, etc.. to make it more tastier and nutritious.

Growing up I remember going to my grandmother’s house specially to eat laddoos and sukhdi that she would have made as offering to God. We would wait for her prayers and offerings to finish and line up with my siblings and cousins to get these sweets from her. One piece of sukhdi made by her was more fulfilling for me then eating a whole chocolate bar. She never forced us to learn cooking. She was very advanced for her time and always encouraged us to be whoever we wanted to be. But on my insisting she taught me some of her precious recipes. Come and enjoy my grandmother’s Sukhdi recipe (little bit modified by me with optional ingredients) with me.

Cooking Time: 10 minutes

For Sukhdi / Gol papdi / Gur papdi

Required ingredients:

  •  1 – 2 cup of ghee (clarified butter)
  •   2 cups of wheat flour (chapatti flour or roti flour or whole wheat flour your choice)
  • 1 cup of grated jaggery
  • 1/2 cup of milk (optional)
  • 5-6 strands of saffron (kesar)

Optional ingredients:

·         1 teaspoon cardamom powder

·         1 teaspoon dry ginger powder

·         2 table spoon of dry grated coconut

How to make Sukhdi / Golpapadi / Gurpapadi / Winter Special Sukhdi

·         Take a small bowl and add 1/2 cup of warm milk in it. Add saffron strands to the milk and let it mix on its own. Let it sit on side while you proceed with the recipe. 

·         Take aluminum pan or a nonstick pan (whatever you prefer). Add 1 and 1/2 cup of ghee (clarified butter) heat it on medium flame and let it melt.

·         Then add 2 cups of wheat flour, mix it with ghee, stir it, whisk it, and roast the flour until it turns reddish brown on low flame.

·         Add the optional ingredients and mix thoroughly with the mixture of ghee and wheat flour on a medium/low flame.

·         Once everything is mixed properly, and the mixture turns reddish brown. Turn off the stove.

·         And add 1 cup of grated jaggery , warm saffron milk, and mix it really well. See to it there are no lumps left. Everything should be thoroughly mixed.

·         Grease the baking tray or any deep dish or thali with butter or ghee. Transfer the mixture into the baking tray while the mixture is still hot.

·         Level the mixture in the baking tray with a flat spatula or bottom of the bowl. Mixture should look flat like in the picture.

·         Make the cut marks on the sukhdi with knife, while it is still hot.

·         Let it set and cool down for 10 – 15 minutes. Take a flat spatula or a big knife and remove the sukhdi bites from the tray/ thaali.

·         Most delicious and nutritious Sukhdi / Gol papdi / Gur papdi is ready to eat.

Tips:

  • Optional ingredients are good to keep your body warm and make digestion better especially during winter. 
  • Sukhdi / Gol papdi / Gur papdi can be made perfectly well with just three ingredients – ghee (clarified butter), Wheat flour, and grated jaggery. 
  • Don’t forget switch off your stove before adding jaggery that will help make sukhdi soft and not chewy.
  • Color of the Sukhdi may vary depending on the brand/type of jaggery and wheat flour you use.
