How to make Eggless Pumpkin Spiced – Chocolate Chip Muffins?

Necessary Ingredients

  • 2 and 1/2  cups of All-purpose Flour (Maida) (or self rising flour – If you are using self rising flour you can skip adding baking powder and baking soda)
  • 1 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons of Cinnamon powder
  • 1 teaspoon of dried ginger powder
  • 1/2 teaspoon of nutmeg powder
  • 1/2 teaspoon of cardamom powder
  • 1 and 1/4 teaspoon of fine sea salt (or regular salt)
  • 1 (15 ounce) can Pumpkin Puree
  • 1 cup light Brown Sugar firmly packed
  • 1/2 cup granulated sugar
  • 2/3 cup Unsalted melted butter (or ghee)
  • 1/2 cup whole milk 
  • 1 cup whisked plain thick yogurt (or plain Greek yogurt or 3 eggs slightly beaten)
  • 1 teaspoon of Vanilla Extract
  • 1 and 1/2 cups of Milk Chocolate chips

 

Recipe

  • Take muffin baking tray and line it with muffin liners (parchment paper liners). If you want you can spray cooking spray on it or spray cooking oil.
  • Preheat the oven at 350F (about 176 C)

  • Mix all the dry ingredients. In a deep bowl whisk together flour, baking powder, baking soda, cinnamon powder, dried ginger powder, nutmeg powder, cardamom powder, and salt (or seal salt). 
  • Further add pumpkin puree, brown sugar, and granulated sugar. Mix everything well.

  • Add melted unsalted butter, whole milk, yogurt, and vanilla extract.

  • Mix everything well. Add 1 and 1/4 cup of chocolate chips to the muffin batter. Mix everything well.

  • Now scoop the muffin batter with the help of round spoon or ice cream scoop in to muffin pan. Add the rest of the chocolate chips on the top of the batter in the muffin pan.
  • Bake the muffins at 350 F (176 C) for about 25 – 28 minutes.
  • Once baked insert the fork or sharp knife in the muffin, if it comes out clear, then muffins are baked and ready.
  • Once the pan is cool enough to touch, Delicious Pumpkin spiced Chocolate chip muffins are ready to eat.

 

How to make Muffins Protein Packed?

  • It is easy to make the above pumpkin spiced chocolate chip muffins protein packed. Replace All-Purpose Flour (Maida) with Kodiak Protein-Packed Flapjack and Waffle Mix Flour. It is easily available in all the grocery stores. 
  • Use the Kodiak Protein Packed flour instead all-purpose flour and follow the rest of the recipe as mentioned above. 
  • Muffins tastes just the same and are healthier. These protein packed muffins are very good for Keto diet.

 

Tips

  • These muffins can be eaten fresh as breakfast, brunch, snack, or dessert.
  • Store them in air tight containers and refrigerate them.
  • Finish eating them within 3-4 days of baking.
  • Warm them before eating in microwave .
