Stir-Fried Sprouted Mung Salad and Raw Sprouted Mung Salad!  Both the salads will satisfy your cravings of eating something crunchy, delicious, savory, salty, and juicy all at once. Will definitely keep you healthy!

Stir-Fried Sprouted Mung Bean Salad

Stir-fried sprouted mung bean salad is perfect for eating in all the occasion and every season. You can make this salad in more quantity and can store it in mason jar / air tight glass jar and eat it within the period of 2-3 days of making it.

Recipe below serves two -four people depending on the serving size!

Sprouted Mung Beans Recipe/ Process / Health Benefits

 

Necessary Ingredients

  • Sprouted Mung Beans – 2 cups
  • Chopped / Minced Cucumber – 1 cup
  • Chopped / minced onion – 1/2 – 1 cup (your choice)
  • Chopped / minced tomatoes – 1 cup
  • Chopped bell peppers (capsicum) – 1/2 cup
  • Grated carrots – 1/2 cup
  • Cilantro for garnishing
  • Turmeric – 1/2 teaspoon
  • Salt
  • Pepper
  • Chaat masala (available easily at Indian grocery store) according to taste – optional
  • Cooking oil – 1-2 table spoon 
  • Red Chili powder – 1-2 teaspoon (I have used Kashmiri – adds more color and is less spicy) – you can choose your on chili powder or can also add green chili paste instead.
  • Lemon – 1
  • Curry leaves
  • mustard seed – 1/2 teaspoon
  • ginger-garlic-green chili paste – 1 teaspoon (optional)

 

Recipe

  • In a pan or a skillet, take about a tablespoon of cooking oil of your choice. Prepare a tempering by adding mustard seeds and curry leaves to the oil at medium flame.
  • Once everything starts sizzling, the tempering is ready.
  • Add ginger-garlic-green chili paste to the tempering. (This step is optional)

  • Add turmeric and red chili powder according to your taste. Stir everything for 10 seconds on a medium flame.

  • Add sprouted mung bean to this. Add salt according to your taste. Stir everything well. Cover it with a lid for about 3-4 minutes and let it cook at a medium flame.
  • Turn off your gas or burner.
  • Now add all the washed and chopped vegetables of your choice or as mentioned above in the list of ingredients to the stir-fried mung beans. Mix everything well while the stir-fried mung beans are still hot.
  • Add salt, pepper, chaat masala (optional), and lemon juice to the salad according to your taste. Mix everything well!
  • Garnish it with chopped and washed cilantro.

  • Stir-fried Mung Bean Salad is ready to eat.
  • If you do not want to eat it immediately you can store it in an air tight glass jar and eat whenever you want.
  • Tastes best if eaten within a day or two.

  • You can also make layers as of the salad in a glass jar and serve it for the events, parties, etc.. as layered salad or salad in a jar.

 

Raw Sprouted Mung Bean Salad

Raw sprouted mung bean salad is perfect for eating in all the occasion and every season. You can make this salad in more quantity and can store it in mason jar / air tight glass jar and eat it within the period of 2-3 days of making it. This is oil free, crunchy, and delicious!  It is a pretty straight forward no hassle recipe.

Recipe below serves two -four people depending on the serving size!

Recipe – Raw Sprouted Mung Bean Salad

  • In a deep mixing bowl, add sprouted mung beans, washed and chopped vegetables of your choice (I have added cucumber, tomato, onion, shredded carrots, and bell peppers (capsicums), salt (according to your taste), pepper (according to your taste), chaat masala (optional) (according to your taste), and lemon juice (according to your taste). 

  • Mix everything well!  Sprouted Mung Beans Salad is ready to eat.
  • Alternatively you can add layers of sprouted mung beans and vegetables of your choice in a glass jar and can store it in refrigerator or serve it in parties and events. Add spices or dressing later.
  • If you want, you can add Mint Cilantro Salad Dressing / Vinaigrette Recipe to this salad for extra zest and taste.

 

Tips

  • Store both the salad in air tight glass jar and place it in a refrigerator. It will stay fresh for 2-3 days. It doesn’t spoil up to a week if you do not add tomatoes.
  • You can skip chaat masala in both salad and add mint cilantro salad dressing.
  • If you want to skip salad dressing and chaat masala; just adding salt, pepper, and lemon to the both salads above will give equivalent superior taste.
