Date cake / date loaf is supremely delicious, nutritious, and easy to make. This dessert is full of micronutrients and macronutrients, essential for good health. This is vegetarian recipe of date cake / date loaf. This article also shows how to make date cake / loaf, vegan. Date cake / loaf can be eaten as dessert or snack. How to make Date Cake / Loaf?

Necessary Ingredients

  • 1 cup of all-purpose flour (or maida) or self-rising flour
  • 3/4 cup milk (warm water instead of milk to make it vegan)
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil (odorless or flavorless) – to make it vegan or butter or ghee for regular recipe
  • 20 pitted dates (whole)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1-2 teaspoons of grounded cinnamon / cinnamon powder
  • 1/3 cup chopped walnuts or chocolate chips (I have used chocolate chips)

 

Recipe

  • Soak dates in warm milk for couple of hours or overnight. Grind it and make thick date paste. To make it vegan, you can soak dates in little bit of warm water and make a thick paste. If you do not have time to soak the dates, boil the dates with little bit of water or milk in pressure cooker up to two whistles. Once it cools down grind it and make date paste.
  • Take medium sized 8 inch cake pan or loaf pan, grease it with your choice of cooking oil and line it with parchment paper.
  • Preheat the oven at 350 F (about 175 C).

  • Add brown sugar, vanilla extract, and vegetable oil (butter) to the date paste (date with milk or water). Mix all the ingredients thoroughly.
  • Mix all the dry ingredients in the deeper bowl. Whisk flour, baking soda, and cinnamon powder thoroughly.
  • Mix all the dry and wet ingredients properly. Add chopped walnuts or chocolate chips to the batter and stir well. Do not over mix.

  • Transfer the batter to prepared cake / loaf pan.
  • Bake in the preheated oven at 350 F (about 175 C) for about 35 to 40 minutes. Bake until toothpick or fork inserted in the middle, comes out clean.
  • Let the cake / loaf cool for about 20 – 30 minutes.
  • Remove the cake / loaf from the pan with the help of parchment paper.
  • Slowly peel off the parchment paper from the date cake / loaf.

  • Delicious, warm, and mouthwatering date cake / loaf is ready to eat.

  • You can also store the date cake in the refrigerator for a week and warm it up before eating.

Tips

  • You can use Kodiak protein packed Flapjack and Waffle Mix Flour instead of regular flour and make this cake more nutritious.
