Peppers Stuffed with Seasoned Mashed Potatoes

Potatoes and Peppers is one of the most delicious combination. For this dish you can use any kind of bell peppers (yellow, red, orange, and green), capsicum, poblano peppers, jalapeno peppers, or any kind of peppers you like. Stuffed peppers can be eaten as appetizer or a side dish.

Nutritional Facts about Peppers

Peppers in general are low in calories and high in nutrition. According to webmd.com, all variety of peppers are excellent source of Vitamins A & C, potassium, folic acid, and fiber.

Peppers come in all shapes and sizes and are used to make food tastier. Some are spicier than others. Spiciness of the peppers depends on what kind of peppers you are using. Serrano peppers, ghost peppers, habanero peppers, Thai chili, Indian chili peppers are considered to be few of the spiciest peppers.

Peppers like different types of bell peppers are used in cooking as well as salads. Red bell peppers are harvested the last so they are known to have the most nutrients compared to the green peppers that harvested the earliest.

How to Make Stuffed Peppers with Seasoned Mashed Potatoes

For this recipe I have used Poblano Peppers. But you can use any kind of bell peppers, jalapeno peppers, or any peppers of your choice. Bigger the size of the pepper, the better. It will help you stuff the peppers properly.

Below recipe includes both with oven and without oven method of cooking stuffed peppers.

 

Preparation Time – 15 – 20 minutes

Cooking time – 20 minutes

Serves – 2 to 4 people

 

Ingredients

  • 2 big Poblano Peppers (or any pepper of your choice)
  • 3 big boiled potatoes
  • Salt
  • Cooking Oil of your choice (I have used avocado Oil)
  • 1/2 table spoon grated ginger
  • 1/2 table spoon grated garlic
  • 1/2 cup of chopped cilantro
  • 4-5 drops of lemon or lime juice
  • 1 tea spoon cumin powder (optional)
  • 2 tea spoon of black pepper powder
  • red chili powder or paprika powder according to your taste (optional)
  • 1/2 cup of shredded cheese (optional)
  • 1 table spoon of sesame seeds

 

Recipe

Part 1 – How to make Seasoned Mashed Potato Stuffing..

  • Take a deep bowl.
  • Peel off the boiled potatoes and put them in the bowl.
  • Mash these boiled potatoes well, with potato masher or with your hands ( be careful if you are mashing with your hands) .
  • To the mashed potatoes; add chopped cilantro, salt to your taste, cumin (optional), black pepper powder, grated ginger and garlic, few drop of lemon or lime juice, and red chili powder or paprika powder (optional).

  • Add grated cheese to the stuffing and mix it well. (If You are Vegan or on Dairy free diet skip this step. Your stuffed peppers will taste just as well without the cheese)
  • Mix everything well with your hand or a mixing spoon.
  • Your seasoned mash potato stuffing is ready.

 

Part 2 – How to make stuffed peppers..

  • Take the peppers of your choice and split them in half.
  • Remove the seeds from the peppers.
  • Take a spoon and stuff your halved peppers with seasoned mash potato stuffing you just made.

  • Fill the halves of the pepper up to the top properly.
  • Pre heat your oven at 350 F (about 177 C).
  • Take your flat baking tray and line it up with aluminum foil.
  • Grease your stuffed pepper lightly with cooking oil from outer side. (this step is optional)

  • Place the stuffed pepper on your baking tray and bake it in the oven for 10 minutes at 350 F (about 177 C).
  • Keep an eye on the peppers (different peppers cook at different temperatures).

  • After 10 minutes once your peppers are cooked half way, sprinkle sesame seeds on the top of the stuffing gently.
  • Again put the baking tray inside the oven and bake the stuffed peppers for another 10 minutes at the same temperature as before.
  • Keep the eye on your peppers while they are baking. Once cooked the peppers will be shinier and the skin would be little shriveled from outside.

  • Transfer them gently to the flat plate and your peppers are ready to eat. Eat them whole or cut them into pieces with knife and then eat them.

 

If you do not want to use Oven, you can use a pan with a lid!

  • Take a non stick pan or whatever cooking pan you have.
  • Grease it properly with cooking oil.
  • Put your stuffed pepper in the pan and cook them at medium heat.
  • Cover your pan with a lid.
  • And let the stuffed peppers cook for about 15 – 20 minutes on medium heat.
  • Keep tossing and checking your peppers gently with a fork or a flat spatula, so the peppers that are getting more heat do not burn.
  • After first 10 minutes sprinkle the sesame seeds on the top of stuffing and cook them again for the rest of the time.
  • Once your peppers look glossy and outer skin is shriveled a bit, your stuffed peppers are ready to eat.

  • Transfer them gently to the flat plate and your peppers are ready to eat.

 

Tips

  • To make stuffing more nutritious, you can add various shredded vegetables like shredded carrots, spinach, collard greens, kale, etc. to the mashed potatoes. Mix everything well.
  • To make the stuffing spicier, you can add 1 tea spoon of green chili paste.
  • If you are not vegan or not on a dairy free diet, you can add a dollop of sour cream to the stuffing. Mix everything well.
