Vegan Thai Fried Rice is a complete meal in one dish. It has good amount of protein from Tofu, carbohydrates from rice, and fibers and vitamins from mixed vegetables. Besides being a wholesome meal, Thai fried rice is extremely flavorful and fragrant dish. This recipe makes low calorie and delicious vegan meal.

Vegan Thai fried rice is made with tofu and stir fried mixed vegetables. For this recipe, I have used extra firm tofu and stir fried it in very less oil instead of deep frying it. Tofu is made from soybean curd and is extremely high source of protein, iron, and calcium. Stir frying tofu in less oil instead of deep frying, keeps the cholesterol level low.

In case of mixed vegetables; I have used combination of chopped carrots, onions, broccoli, zucchini, green bell peppers, and brussels sprouts. All you need to do is stir fry these vegetables for 3-4 minutes. So that they are cooked and yet crisp.

For flavors; I have used ingredients like kaffir lime leaves or lime/lemon zest, basil leaves, brown sugar, soy sauce, garlic, ginger or galangal, and red curry paste (home made or store bought). Red Curry Paste is completely optional. Instead of red curry paste you can use red chili flakes to add spice to Thai fried rice. These ingredients play key role in making Thai fried rice extremely flavorful and fragrant.

How to Make Thai Fried Rice?

To make Vegan Thai Fried Rice; you need utensils like skillet, deep pan or a wok.

Preparation Time – 20 minutes

Cooking Time – 10 – 15 minutes

Serves – 5 – 6 people

Ingredients

  • 3 cups of uncooked or 5-6 cups of cooked and cooled rice. You can use any long grain rice like Jasmin rice or basmati rice.
  • Any Vegetable cooking oil of your choice (I have used avocado oil) .
  • 1 cup of chopped onions.
  • 1/2 cup of chopped carrots.
  • 1/2 cup of chopped brussels sprouts.
  • 1/2 cup of chopped broccoli.
  • 1/2 cup of zucchini.
  • 1/2 cup of green bell peppers.
  • 2-3 tablespoons of red curry paste (optional).
  • 2 tablespoons of soy sauce.
  • 2 tablespoons of brown sugar or jaggery powder (optional).
  • salt and pepper according to taste.
  • 4-5 basil leaves.
  • 2-3 kaffir lime leaves or 1/2 tablespoons of finely grated lime / lemon zest.
  • 1/2 slab or about 6 Oz of extra firm or firm organic tofu. Cut it into small rectangular pieces.
  • 1/2 cup of green onions / scallions.
  • 1/2 cup of finely chopped cilantro or coriander. 
  • 1 tablespoon of grated garlic.
  • 1 tablespoon of grated ginger or galangal.
  • 1 tablespoon of red chili flakes (optional).

Recipe

Part 1 – How to cook long grain rice..

  • In a boiling pot, take 3 cups of rice. Wash them properly. Add double the amount of water to the pot. Boil the rice on medium flame. Once the grain gets cooked properly, drain the access of water if left. Let the rice cool. Transfer the hot cooked rice in the wider pan or bowl and let it cool completely.
  • If you have left over rice or yesterday’s cooked rice, it will be even better.
  • Cold rice is perfect for making fried rice.
  • 3 cups of uncooked long grain rice will double in the quantity after cooking. So three cups of uncooked rice is equal to 6 cups of cooked long grain rice.

Part 2 – How to make Vegan Thai Fried Rice..

  • Take about 2-3 tablespoons of cooking oil (vegetable, olive, or avocado oil) in a deep pan, skillet, or a wok. Heat it on a medium flame. 

  • Now put the chopped extra firm or firm organic tofu in it, and stir fry them until they are golden brown.
  • Transfer the stir fried tofu to a bowl or a dish.
  • In the same wok or a deep pan, put another 2-3 tablespoons of cooking oil heat it on a medium flame.

  • Transfer the chopped onions and sauté them on medium flame for 2-3 minutes.

  • Then transfer all the rest of the chopped vegetables like carrots, brussels sprouts, broccoli, bell peppers, and zucchini to the pan or wok. Stir fry them properly for 4-5 minutes on medium high flame. The vegetables should be cooked and crispy. Don’t let them soften or burn.

  • On a medium flame, now add grated ginger, grated garlic, soy sauce, brown sugar (or powdered jaggery), kaffir lime leaves or grated lemon zest, and basil leaves. Stir everything well.

  • Add 2-3 table spoon of red curry paste to the stir fried vegetables mix. This step is optional. Adding red curry paste will make Thai fried rice spicier and little more authentic in taste. But without red curry paste, the Thai fried rice will taste just as good.
  • Stir all the ingredients properly and let it cook for another 2 minutes.

  • Now transfer the cooked and cooled rice to the stir fried vegetable mixture. 
  • Add salt and pepper according to your taste.

  • Now gently mix the rice with all the other ingredients.

  • Add the stir fried tofu and mix everything gently on a medium flame.
  • Garnish the Thai Fried Rice with chopped green onions and cilantro (coriander leaves). 
  • If you want your Thai Fried Rice to be spicier, add red chili flakes on the top.

  • Vegan Thai Fried Rice with stir fried tofu and mixed vegetables is ready.

  • Serve / eat it hot.

  • Thai Fried Rice goes really well with Thai Clear Soup  and Thai Curry on Side.

Tips

  • If you are not allergic to nuts, you can stir fry cashew nuts and add to the Thai Fried Rice.
  • This recipe is of vegan Thai Fried Rice. But if you want to add any other nuggets or scrambled eggs to your fried rice, add them during stir frying the vegetables step of this recipe. Follow rest of the recipe as it is.
