Home made Thai Red Curry Paste Recipe

Thai red curry paste is fragrant and flavorful multipurpose paste. It serves as a base to make different kinds of Thai dishes. It is quick and easy to make from scratch. It is made with a combination of extremely flavorful and strong ingredients like dry red chilies, lime or lemon zest, ginger or galangal, garlic, lemongrass, cilantro root or stem, and red onions. Once you try this paste you will never buy a store bought paste. You can use this paste to make vegan curries, vegetarian curries, seafood curries, beef curry, fish curry, Thai fried rice, Thai soups, Thai noodles, etc.…

Ingredients:

 

  • 5 – 15 mild dried red chilies (depending on how spicy you want your paste to be).
  • 3 tablespoon of chopped lemongrass (include the purple part).
  • 1 table spoon of peeled and finely chopped or sliced ginger or galangal.
  • 3 table spoon of finely chopped cilantro stem or 2 table spoon of chopped cilantro root (you can use coriander root or stem instead of cilantro, whatever is available in the region you are situated).
  • 2 – 3 table spoon of lime / lemon / kaffir lime zest (peel of the lime or lemon you have at home with a knife, make fine slices or pieces of the zest and use it).
  • 3 table spoon of chopped garlic.
  • 1/3 cup of chopped shallots (red or purple onion).
  • 2 -3 teaspoon of pepper (black or white).
  • Salt to taste.

Recipe:

  • Take dry red chilies as many as you want according to your taste and soak it in water until they are soft. Once the chilies have softened drain the extra water and dry the excess water with paper towel. Chop them off and them to the blender
  • Further add finely chopped ginger or galangal, lemongrass, cilantro stem or root, garlic, shallots or onions, and lime zest to the blender.
  • Add salt and pepper, and 2-3 table spoon of water. Further crush and blend the mixture.

  • Paste should be thick in consistency.
  • Your Thai Red Curry Paste is ready to use.

  • Taste the paste if you want it to be spicier add red chili powder, if you want it to be tangier add more lemon zest and lemon grass, and if you want it to be more salty add extra salt.
  • Once ready transfer this paste in the air tight container and store it in the refrigerator.

Note and Tips:

  • This paste is supposed to be spicy, tangy, and salty. So that you have to add minimum amount of extra salt to the dish you are going add this paste to.
