Vada pav also known as Wada pao or Mumbai burger or Bombay burger is vegetarian street food, native to the state of Maharashtra (India). It is made of deep-fried potato dumpling, burger buns, delicious chutneys, and fried chili. This burger (Vada Pav) originated as affordable street food in Mumbai – Maharashtra. But is now enjoyed by all the Indians across the world. It has kind of become part of Indian culture.

Vada Pav is the most famous and most eaten street food / vegetarian burger in the state of Maharashtra and across all over India. Vada Pav is much easy to make and quicker to prepare. The most important part of any good Vada pav is its patty. The patty used in Vada pav is called batata Vada or aloo bonda. It is crispy, savory, and made from flavored mashed potatoes. This patty is either oval shaped or flat patty shaped. This fried patty (also known as Vada) is put between the burger buns along with flavorful chutneys and fried chili.

Vada Pav is served as brunch, evening snack or can be eaten as on the go-fast food. This burger is extremely delicious, filled with carbohydrates, and fiber. To make this burger, boiled potatoes are mashed and mixed with green chilies, coriander (cilantro) leaves, salt, red chili powder, turmeric powder, cumin coriander powder, oil, mustard seeds, curry leaves, and lemon juice. Everything is mixed up properly and dipped in the batter made from chickpea flour (besan) and deep fried. This fritter is placed between the bread buns accompanied with one more chutneys and fried green chili.

Traditionally Vada pav has chili garlic chutney and fried chili in it. But to make it tastier or to make it according to their own taste, people add cilantro (coriander) chutney, mint cilantro (coriander) chutney, and even sometimes sweet tamarind chutney along with chili garlic chutney.

How to make Vada Pav?

Preparation Time – 20 minutes

Cooking Time – 20 minutes

List of Ingredients

For making batata Vada / patty / aloo bonda / fritters

  • 2 teaspoon cooking oil
  • 1 teaspoon of mustard seeds
  • 3-4 curry leaves
  • 1 teaspoon of grated ginger
  • 1 teaspoon of grated garlic
  • Pinch of hing / asafoetida
  • 1 teaspoon finely chopped green chili
  • 1/3 cup of finely chopped cilantro (coriander leaves)
  • 1 teaspoon of turmeric powder
  • 3 – 4 boiled and mashed potatoes
  • Salt according to taste
  • 1 teaspoon cumin coriander powder
  • Red chili powder (according to taste)
  • ½ teaspoon of lemon juice

For Chickpea flour / gram flour / besan batter

  • 2 cups of besan / gram flour / chickpea flour
  • 2 tablespoon of rice flour or regular wheat flour
  • 1 teaspoon of turmeric powder (also called haldi)
  • 1 teaspoon of red chili powder
  • Salt according to taste
  • Drinking water
  • 1 teaspoon of ajwain (carom seeds)
  • Oil for frying

Other necessary ingredients

  • Burger buns
  • Green chilies
  • Chutneys of your choice
  • Cilantro chutney or Mint cilantro (coriander) chutney
  • Chili garlic chutney
  • Sweet tamarind chutney (optional)

Recipe

  • Take a big bowl. Add peeled boiled potatoes to the bowl.
  • Mash them well and add grated ginger, garlic, and green chili to it.

  • Further add salt, chili powder, cumin coriander powder, turmeric powder, lemon juice, and finely chopped cilantros to the mashed potatoes and mix everything well.
  • Make sure there is no moisture in the mashed potatoes mixture.
  • Next take a pan and add 1 teaspoon of cooking oil and let it heat up on the medium flame.
  • Add mustard seeds, hing (asafoetida), and curry leaves to the hot oil and let it simmer.
  • Add mashed potatoes mixture to this and mix everything well. This step helps remove the extra moisture from the potatoes.
  • Stir for a minute and make sure everything is mixed well.

  • Transfer this mixture back to the big bowl.

  • Grease your hands and take a big spoon full of mashed potato mixture and shape it into the oval shaped balls or patties.
  • In a separate big bowl, take chickpea flour / gram flour / besan.

  • Add salt, turmeric powder, ajwain (carom seeds), rice flour or wheat flour, red chili powder, and mix all the dry ingredients well.

  • Now start adding water to it little by little to make a batter. Batter should not be extremely thin or thick. It should be somewhere in the middle.
  • Take a deep-frying pan and heat up the oil until it reaches the frying temperature.

  • Now dip the potato patties (Vada) in the batter and put them in the frying pan and fry the fritters / patties / Vada until they turn golden yellow in color. Fry on a medium flame.

  • Once fried, transfer them to a flat plate lined with paper towel.
  • Once all the fritters / Vada / patties are ready.
  • Take the green chilies and fry them in the same frying pan and transfer them to flat plate lined with paper towel.

  • Take a flat pan and roast the burger buns.
  • Transfer them to a flat plate.

  • Apply mint cilantro (coriander) chutney or cilantro (coriander) chutney on both sides of the buns.
  • Then add red chili-garlic chutney on both sides.

  • Add Vada / fritters / patties to the bun.
  • Add deep fried green chili on the top of the patty (this step is optional).

  • Cover the patty / Vada with other side of the bun.
  • Delicious Vada Pav / Mumbai Burger is ready to eat.

 

Tips

  • Ensure the boiled and mashed potatoes are moisture free and removed immediately from pressure cooker after it is cooked.
  • Make patty according to the shape of the bun.
  • If you want to make these in bulk to serve it for a gathering, you can make Vada / fritters / patties a day ahead and reheat them on pan, oven, or microwave.
