Besan Chilla with mixed vegetables makes for the perfect healthy and tasty breakfast. It can also be eaten as mid day meal or light lunch or light dinner. Besan Chilla are also called Gram flour pancakes or crepes. These chillas are savory pancakes (crepes) that are high in protein and fiber contents. 

What is Gram Flour / Besan?

Besan is basically gram flour or split gram flour or chickpea flour. This chickpea flour is commonly known as besan in India. But is available around the world today. This flour is extremely nutritious for growing kids and adults. We can make extremely delicious and aromatic sweet and savory dishes out of it. 1 cup of gram flour is known to have 0 Cholesterol, 10 gram fiber, and 21 grams of protein amongst other important nutrients.

 

Preparation Time For This Recipe – 10 minutes

Cooking Time – 5 – 10 minutes (also depends on how many you are making)

This Recipe Serves – 2 – 3 people

 

List of Ingredients

  • 1 Shredded Carrot
  • 1/2 Shredded Cucumber
  • 1/2 Shredded Onion
  • 1 cup minced greens (spinach, kale, collard greens, fenugreek, etc…  Choose your greens or the combination of greens according to your liking)
  • 1/2 minced tomato
  • 3 cups of gram flour (also known as besan or chickpea flour)
  • 2 – 3 cups of drinking water
  • Cooking Oil
  • Salt to taste
  • 1 teaspoon turmeric powder
  • 1 /2 teaspoon of carom seeds (ajwain) – Optional
  • 2 – 3 teaspoon of red chili powder (According to your taste)
  • 2 teaspoon of cumin powder or cumin-coriander powder – Optional

 

Recipe 

  • Take a deep bowl. 

  • Add all the Shredded and minced Vegetables of your choice to the bowl.

  • Add 3 cups of Chickpea flour (Besan or Gram Flour) to the bowl.

  • Add turmeric, chili powder, carom seeds (ajwain), salt, and cumin or cumin-coriander powder to the bowl.
  • Mix everything well.
  • Now start adding water to the mix half a cup at a time to make the batter.

  • For this recipe I have used about 2 – 3 cups of water. Amount of water depends on the type of gram flour ( Besan or Chick pea flour) you are using.

  • The consistency of the batter should look like this.
  • Now take nonstick pancake pan or crepes pan or dosa pan.
  • Grease the pan with the cooking oil lightly.
  • On a medium flame pour the batter on the pan with a ladle and spread the batter on the greased pan in a shape you want with the help of the same ladle.

  • I have made heart shaped and round shaped chilla / pancake/ crepes.

  • Once you have spread the batter in the shape of your choice on the pan, let it cook on a medium flame. 

  • Let it cook until you see small bubble on the top of the pancake / chilla. It will appear firmer and cooked.

  • Flip the chilla / pancake/ crepe on the other side with the help of flat spatula. Add little bit of cooking oil around the chilla / pancake.

  • Let it cook on both sides. Both sides should have reddish or brownish spots or net like design. 
  • Your Mix veg chilla / pancake / crepes are ready to eat.
  • Serve them hot.

  • You can eat it by dipping it yogurt or ketchup or cilantro (coriander) chutney (dip) or mint cilantro (coriander) chutney (dip).

Tips

  • Tastes best when served hot.
  • Also tastes well as lunch box meal.
  • Cucumber, onion, and tomatoes have their own water content. Decide the water quantity depending on which vegetables you are adding.
  • Chickpea flour / Gram flour / Besan is easily available in Indian Grocery Store or your nearby ethnic grocery store.
  • You can make these Chillas / pancakes / crepes without vegetables too. Follow the above recipe and skip the vegetables.
